Hyderabadi Biryani

Do You People Know? From Where The Word Biryani Has Come?

The word Biryani is taken from the Persian words, which means the rice is fried before cooking. In the Persian, biryani is called “birian”. Whereas in Hyderabad, it is named as Hyderabadi Biryani in most places.

From the time of Emperor Babur, Biryani is made with whole spices and varieties of meat. But in Hyderabad, Nizams have originated the Hyderabadi Biryani by making very little changes in the recipe.

Not only in Hyderabad, but biryani is prepared in different states and countries. Among different countries and states, only Hyderabad got much enthusiasm because of the aromatic spices and cooking style.

Biryani can be cooked in two different ways, one is the Kachi Gosht Ki Biryani and the other one is Pakki Biryani. But Nizam's traditional way of cooking Biryani follows the Kachi Gosht Ki Biryani. This style includes the layering of marinated meat with whole long grain basmati rice flavoring with saffron and ghee, then cooked by sealing the handi with dough.

Golden Fried Onions - The Secret Ingredient of Hyderabadi Biryani

Hyderabadi Biryani is rich in its flavors like various spices that include cardamom, black pepper, cinnamon stick, nutmeg, star anise, cloves, bay leaves, saffron, etc. Also, it includes marinated meat, ghee, and basmati rice. Then the ingredients are combined and layered accordingly. Here the meat varies with place, city, and person. Instead of mutton, one can use chicken, fish, prawns, beef, lamb, etc. It is completely an individual choice and the taste varies.

But, the secret behind preparing the biryani is, the onions should be deep-fried until they get golden brown and crispy. Then the leftover oil is added while cooking. This is the flavor that adds to the Biryani and makes it even more delicious. The greatness of biryani can be witnessed in many restaurants, hotels, eateries, inns, etc. Since the Nizams times, biryani has become the synonym of Hyderabad as Hyderabadi Biryani.

Hyderabadi Biryani is love. If you are a Hyderabadi then you would have been obsessed with eating biryani. If you are about to visit Hyderabad, then definitely you must try the taste of Hyderabad(the Biryani).
